Domaines Paul Mas was founded in 1892. The current owner is Jean-Claude Mas and this is undoubtedly the pioneer in the field of the revival of the Languedoc as a region for quality wines. Jean-Claude characterizes his wines as 'Le Luxe Rural', rural luxury. With international grape varieties, he has given the Languedoc 'new world' allure. And with his fashionable wines from local grapes, he has made the local character of the Languedoc hip again for wine lovers. Hubrecht Duijker rightly calls Jean-Claude Mas a 'wine wizard' and at Grandcruwijnen we are the only ones in the Netherlands who also carry Paul Mas 's high end Grandcrus .
Les Faïsses (which means 'slopes' in Occitan) wine comes from vineyards on terraces with a south, southeastern view overlooking the Herault valley between the villages of Montagnac and Saint Pons de Mauchiens in the Languedoc. Due to the terrace structure, each vineyard is quite small: up to 0.8 hectares for the larger ones, and most of the work has to be done by hand. These vineyards were first planted 2000 years ago by the Romans with vines and olive trees. Their tradition has remained the same with some variations over the centuries depending on the needs of the population, especially in difficult times (XI and XII centuries), when these terraces were mainly used for growing vegetables. In any case, they offer very good conditions for growing vines and bringing the grapes to maximum maturity.
The wine consists of 95% Chardonnay grape with a little Mauzac (5%) for extra elegance. The chardonnay grapes are hand picked. The wine has had its fermentation for 28 days in temperature-controlled barrels of new French oak and then has matured for 9 months in barrels of French (60%) and American (40%) oak. Barrels 1/3 new and 2/3 two years old.
In the glass the wine has a nice light yellow full color. The wine is certainly very refined and elegant for the price range. Clearly a wood ripened chardonnay but without this being an extreme vanilla bombshell as with (too) many chardonnays. In the nose we smell beautiful notes of tropical fruits, hazelnuts, citrus fruit, supported by a tone of vanilla. In the mouth, the wine is full bodied with hazelnuts and citrus fruit, supported by a light tone of vanilla.
